  1. In a bowl, mash the ripe avocado until smooth and creamy.
  2. Slice the Banquet d'Or brown multigrain baguelino in half horizontally.
  3. Spread the mashed avocado generously on the bottom half of the baguelino.
  4. Layer pickled red cabbage, fermented carrot slices, radish marinated in Risso Thai soy dressing, pickled cucumber, and spring onion on top of the mashed avocado.
  5. Place the top half of the baguelino over the layered vegetables.
